SPECIALITY HERBS

These culinary herbs are what we like to call our “speciality” product and an area of the business that we all really enjoy being involved with.

They are grown on our farm, in addition to our traditional fresh herb crops, for customers who are looking for ‘something different’. With these less common herbs our clients are able to push the boundaries of food flavour and experiment with new ideas.

Many of our culinary herbs have been long forgotten and it’s refreshing to see some of our chefs recreating the traditional uses for them, along with some new and innovative recipe ideas.

The majority of our crop is available for our full growing season from May to September, with some exceptions.

ANGELICA

Fantastic herb somewhere between parsley and celery.

ANISE HYSSOP

The leaves have a strong aniseed/liquorice flavour and make a great addition to salads

APPLE MINT

Spearmint flavour with a hint of fruity apple

BANANA MINT

Makes an interesting addition to summer drinks and salads

BASIL

Combines mint and basil flavours to make a great addition to tomatoes and lamb

BLACKCURRANT SAGE

Very strong scent and taste of blackcurrant, beautiful pink flowers

BORAGE

Clean and mild cucumber taste, perfect in a salad

BRONZE FENNEL

A great versatile herb with aniseed flavour, great with fish dishes

CHERVIL

A delicate alternative to parsley with a hint of liquorice

CHOCOLATE MINT

Imagine after dinner mints in herb form, fresh and minty and ideal for desserts

DITTANDER

Also known as 'Yorkshire Wasabi' perfect with beef salads with a warm horseradish flavour

ENGLISH MACE

Not to be confused with the outer casing of nutmeg

GARLIC CHIVES

Their subtle garlic flavour is much milder and sweeter than the common chives

GREEN FENNEL

A feathery aniseed flavoured herb

HYSSOP

A slightly bitter and liquorice flavour, very good with fatty meats

LAVENDER

A very fragrant herb, ideal for baking

LEMON BALM

Chopped Lemon balm leaves make a fantastic addition to flavour, butter, vinegars, oils & dressing

LEMON BASIL

Use this citrus flavoured basil in desserts and savouries alike

LEMON GRASS

Picked fresh from the greenhouse, fresh lemony flavour, ideal for Asian cooking

LEMON THYME

Fresh lemon flavour, replace lemon juice or zest with this herb

LEMON VERBENA

This popular herb has a Fresh lemon sherbet flavour, a very versatile herb for fish, baking and teas

LIME MINT

Light and refreshing summery herb, ideal in salads and drinks

NASTURTIUM LEAVES

Surprisingly hot and peppery punch in these leaves, ideal for salads and butters

ORANGE THYME

Try flavouring chocolate with this orange scented version of thyme

OXALIS

Use the leaves fresh in salads, sprinkle on fish to add a citrus taste

PINEAPPLE MINT

Has a fresh, fruity aroma that works well with cocktails, fruit salads and jellies

SALAD BURNET

Delicate leaves with a cucumber flavour and a nutty aroma and great in salads and perfect for a Pimms!

RED OXALIS

Sharp citrus taste that works well in a salad

SUMMER SAVORY

Combines well with vegetables, pulses and rich meats, less bitter than winter savoury

SWEET CICELY

A sweet aniseed flavoured herb which is a very good sugar substitute, great pairing with rhubarb

THAI BASIL

Has a distinct liquorice flavour that doesn't exist in sweet basil

WINTER SAVORY

A strong peppery taste, so only a small amount required

  MICRO LEAF

We have a range of 6 micro leaf available, these are perfect to add flavour and colour to your dishes. The delicate leaves are prefect for garnish or a perfect addition to salads to add texture, colour and flavour

YORKSHIRE GROWN KALE

We grow a wide variety of kale on our farm, which we sell either in single varieties or mixed boxes. We also sell as chopped and washed if required. The varieties we grow are; Green Kale, Purple, White and Cavolo Nero Kale

Kale – Known as a superfood due to it’s nutrient dense, full of minerals and vitamins to include B Vitamins, Vitamin C, Vitamin E and Vitamin K.  An extremely healthy option with many health benefits! Great for salads, stir fry’s, sides, smoothies, soups, pasta and even makes great crisps!
