Lemon Balm (Melissa officinalis)

Lemon balm is related to mint and looks very similar. It is a traditional herb and as well as it’s culinary uses is often used as a repellent fro flies and midges.

Lemon balm is often used as a flavouring in ice cream and herbal teas and like lemon verbena can also be used in fish and poultry dishes, marinades and salad dressings as well as preserves, puddings, and drinks.

Lemon balm is always best used a s a fresh herb, as it loses it’s flavour very quickly when dried.
